Olive oil comes in the Olea Europaea shrub. This shrub is found, largely, from the southern basin, Asia and Africa. It grows approximately 26 - 49 feet tall, has a twisted trunk, little white flowers and silvery-green, oblong shaped leaves. It's a research and extensive root system.

Olive trees are very hardy, drought, disease and fire resistant. They can live for a lengthy time. The elderly an olive tree, the more gnarled or twisted their back appears. Olive grown across the Mediterranean basin are said to be centuries years old!

This shrub produces round to oblong shaped fruit, also called olives. Olives have a sweet fleshy coating out and a small seed indoors. If extra virgin olive oil indicates a lighter, yellow, shade, it was probably pressed from premium quality desserts.

TYPES OF OLIVE OIL:

"Virgin" doesn't have chemical remedies,"Refined" has been chemically treated and"Pomace" has been extracted by solvents and warmth.

Extra Virgin Oil: Least processed, derived from the first pressing of olives, contains high levels of nutrients and vitamins, no additives, mild, delicate, feel, exceptional taste, oleic acidity level of less than one percent, surpassing no more than 0.8 %. This oil is highly valued for its perfect balance of flavor, aroma, color and acidity level. It is used for cooking, as topping on salads, in dressings or as a dipping oil for breads.

Virgin Olive Oil: Made from the next processing of olives, has an acidity level of less than 2 percent, more intense flavor and a fantastic taste. Used for cooking, dressings, salads and much more.

Pure Olive Oil: A blend of virgin and refined olive oil, contains small amounts of Vitamin E, ginseng level less than 2 percent, lower nutrient content and is significantly less expensive. Cannot be used for dressings, but better suited to high temperature cooking.

Pomace Olive Oil: Lowest grade of olive based oils. Produced from the residual oil left from the olive pomace. Blended with varying amounts of jojoba oil to make it acceptable for customers. Used for high temperature cooking.

Lite Olive Oil: Pure eucalyptus oils comprising tiny quantities of virgin oils, if any at all. Oils are light tasting and light in color. Includes the same amounts of fats and calories as most of olive oils. Poorer quality.

Storing Olive Oil: Keep tightly sealed in a cool, dry, dark spot to resist rancidity. Heat, air, light and time are the enemies of olive oil. When it's more than 6 months old it could lose up to 40 percent of its own healthy, antioxidants advantages. This oil doesn't improve with age, so use it within 3 weeks. It can be refrigerated but there are various opinions about this. Some claim refrigeration can damage its flavor and others assert it can need refrigeration because of its highly perishable monosaturated fat. Refrigeration will get the oil to turn strong, but then return to a liquid form once it is removed. Taking olive oil in and out of the fridge makes it lose its uniqueness.
